Ingredients

  • 500 g white couverture
  • 40 ml white rum (or rum flavoring)
  • 150 g peeled whole almonds
  • 100 g peeled walnut kernels
  • 2 cm fresh ginger
  • 80 g dried apricots

Instructions

    Coarsely chop the chocolate and melt it over a hot, non-boiling water bath with the rum.

    Meanwhile, toast the nuts in a dry pan until fragrant, remove and coarsely chop. Peel and finely grate the ginger. Slice the apricots into strips then dice them small.

    Add the nuts, ginger, and apricots to the chocolate, stir, and spread onto a parchment-lined baking sheet about 1 cm thick. Let cool and cut into strips with a knife dipped in hot water.
