White Cake Pops

Ingredients

- flour (for the pan)
- 60 g sugar
- 80 g Butter
- 2 Eggs
- 70 g flour
- 70 g ground almonds (peeled)
- 1 tsp Baking powder
- 4 tbsp buttermilk
- 40 g Butter
- 100 g cream cheese (plain)
- 60 g powdered sugar
- 2 tbsp lemon juice
- 0.5 tsp lemon zest
- 1 Egg white
- 150 g powdered sugar
- silver sugar pearls
Instructions

Preheat the oven to 180°C fan. Grease a springform pan and dust with flour.

Beat the butter and sugar until fluffy. Add eggs one at a time, mixing well. Combine flour, almonds, and baking powder; fold into the batter alternately with buttermilk until smooth. Pour into the prepared pan and bake for about 30 minutes (test with a skewer). Remove from oven and cool. Release the cake from the pan, break into pieces, and crumble in a bowl.

Whisk butter, cream cheese, powdered sugar, lemon juice, and zest together. Add to the cake crumbs and mix until combined. Form small balls about 3 cm in diameter. Place on a flat tray and chill for at least an hour.

Beat the egg white until stiff peaks form; gradually add powdered sugar until a firm glaze forms.

Insert each ball onto a white stick, dip into the glaze, then roll in silver sugar pearls. Let dry before serving.
