Waffles with Compote

Ingredients
- 500 g strawberries
- 1 Orange (juice)
- 0.5 Vanilla bean
- 2 tbsp sugar
- 125 g softened butter
- 125 g sugar
- 3 eggs
- 120 g flour
- 1 tsp ground cinnamon
- 1 tsp Baking powder
- 40 g ground almonds
- softened butter (for greasing the waffle iron)
- powdered sugar (for dusting)
Instructions

For the compote, wash and trim the strawberries, then cut them into pieces. Reserve some for garnish. Boil the rest with orange juice, split vanilla bean, and sugar. Stir occasionally and simmer for about 10 minutes until it thickens into a compote. Remove from heat, add the remaining berries, and let cool.

For the waffles, cream the butter with sugar. Gradually add the eggs, whisking until frothy. Mix in flour, cinnamon, baking powder, and almonds, then fold into the froth evenly.

Grease the waffle iron with a little butter. Pour a small amount of batter into each section according to the iron’s size and cook until golden brown.

Dust the waffles with powdered sugar and serve with the compote.
