White Cabbage Salad

Ingredients

  • 500 g white cabbage
  • Salt
  • 3 tbsp vinegar
  • sugar
  • 1 small red chili pepper
  • 1 Carrot
  • 120 g red beans
  • 2 cornichons
  • 1 red bell pepper
  • 2 tbsp oil
  • ground pepper
  • 4 tbsp canned corn kernels

Instructions

    Cut the cabbage into strips. Mix with 2 tsp salt, 2 tbsp vinegar and 2 tsp sugar. Use a potato masher to work it through until the cabbage softens. Slice the chili, remove seeds and finely chop the flesh. Mix under the cabbage. Cover for 2 hours to marinate.

    Peel the carrot and dice small. Boil in salted water for 5 minutes. Drain and let cool. Rinse beans in a colander with cold water and drain. Slice cornichons thinly. Quarter the bell pepper, clean, rinse and finely dice.
