White Cabbage Slaw with Fruits

A fresh white cabbage slaw featuring apples and grapes, a vibrant vegetable salad recipe from Spoonsparrow.

Ingredients

  • 1 small white cabbage (ca. 500 g)
  • 125 ml vegetable broth (instant)
  • 2 tbsp white wine vinegar
  • 1 tbsp oil
  • Salt
  • black pepper (freshly ground)
  • 100 g yogurt
  • 1 apple
  • 200 g light grapes
  • 1 tbsp toasted sunflower seeds

Instructions

    Clean the cabbage, quarter it lengthwise, remove the core and cut or shave the quarters into thin strips. Mix with 1 tsp salt, knead well and let rest for 1 hour.

    Heat the vegetable broth and add vinegar, oil and pepper to the cabbage; mix thoroughly and let sit for about 30 minutes. Then transfer the salad to a sieve to drain, place in a bowl, stir in yogurt and season heavily. Wash the apple, quarter it, remove seeds, cut into thin slices. Wash grapes, pat dry, then combine both with sunflower seeds and fold into the slaw.
