Vienna Sausages with Potato and Cucumber Slices

Ingredients

  • 0.5 salad cucumber (organic)
  • 2 large potatoes (cooked)
  • 4 pairs small poultry sausages
  • 0.5 bunch radishes
  • 1 romaine lettuce heart
  • 3 leaves Chinese cabbage
  • 50 ml heavy cream
  • 150 g natural yogurt
  • 2 tbsp mild vinegar
  • 1 pinch salt
  • pepper (white)
  • 1 tsp seasoned vegetable broth

Instructions

    Wash the cucumber thoroughly and cut into 24 nice slices. Peel the potatoes and cut into 16 nice slices. Using a round cutter (diameter of sausage), punch or cut a hole in the center of each slice. Thread the slices decoratively onto the Vienna sausages and lightly salt them.

    Wash the salad, shake dry and cut into strips; wash the radishes and finely shave them; from 1-2 radishes cut out tongues and eyes to shape the sausages. Arrange the salad with radish slices on a plate and place the sausage worms on top.

    Whisk all dressing ingredients together, season, drizzle over the salad and worms, and serve the remainder in small bowls extra.
