White Bread

Ingredients
- 400 g wheat flour Type 405
- 20 g fresh yeast
- 50 ml olive oil
- 0.5 tsp Sugar
- 1 tsp salt
- flour (for the work surface)

Mix the flour with the salt and make a well in the center. Stir the yeast with 200 ml lukewarm water and the sugar until it dissolves. Add the yeast to the flour well and mix with a little flour so that a thick consistency forms.

Let this pre‑starter rise covered in a warm place for about 45 minutes. Then add the oil and the remaining flour, knead into an elastic, medium‑firm dough (add a bit more water if needed) and let it rise covered at room temperature for about 2 hours.

Knead the dough again, shape it into a slightly elongated loaf, place it on a floured baking sheet and let it rise covered for another hour. Preheat the oven to 220 °C (top/bottom heat). Bake the bread in the preheated oven for about 40–45 minutes until golden brown, placing a bowl of boiling water in the oven at the start.
