Ingredients
- 1.5 tsp dry yeast
- 375 ml lukewarm water
- 750 g wheat flour
- 15 g salt
- 2 tbsp olive oil
Instructions
-
1.
For preparing this baked good, the best appliances are the Küppersbusch Kombidampfgarer EKDG or the Küppersbusch built-in oven with steam EEBD.
-
2.
Dissolve yeast in 250 ml warm water in a bowl until fully dissolved. Add 250 g flour and mix well. Cover and let rest in a warm place for 30 minutes.
-
3.
After resting, transfer the dough portion to the mixing bowl. Add remaining water, remaining flour, and salt, then knead with a hand mixer or stand mixer attachment until the dough is smooth and elastic. Knead for about 15 minutes until it releases from the bowl edges. Cover and let rise in a warm place until doubled in volume.
-
4.
Then knead the dough again on a floured surface, rub with olive oil, and place in a bowl. Cover with a clean, damp kitchen towel and let rise in a warm place for about 1 hour until doubled.
-
5.
Shape the dough into a long strand, loosely twist the ends together to form a ring. Place on parchment-lined baking sheet and lightly dust with flour.
-
6.
Bake at 180°C (356°F) for about 30 minutes until browned and hollow-sounding when tapped on the bottom. Cool on a wire rack before serving.
