White Bread

Ingredients
- 150 g Whole wheat flour
- 400 g wheat flour (Type 405)
- 1 packet dry yeast (7 g)
- a pinch of sugar
- 1 tbsp sea salt
- 1 tsp Cornstarch
- butter (for the baking sheet)

Preheat the oven to 50°C fan.

Combine the two flours, dry yeast, sugar and salt. Gradually knead in up to 200 ml lukewarm water until the dough becomes smooth and supple. Add more flour or water if needed. Knead vigorously for about 5 minutes so that a lot of air enters the dough. Place it in a bowl, cover and let rest in the oven for about 1 hour. After this the dough should have roughly doubled in volume and show clear cracks on the surface.

Meanwhile whisk the cornstarch into about 200 ml water, bring to a boil, then remove from heat and let cool to lukewarm.

Take the dough out of the oven and switch the oven to 250°C with top and bottom heating. Place an oven‑proof dish with hot water beside it. Knead the dough again and shape it into a long loaf, incorporating a little flour if necessary. Put the loaf on a buttered baking sheet and make several diagonal slashes on the surface. Brush with the starch solution and bake for about 10 minutes, then reduce the temperature to 200°C top and bottom heating. Finish baking for about 45 minutes. Warm the remaining starch solution again and brush the finished bread with it. Let cool on a wire rack.
