White Bread

Ingredients
- 0.5 cube fresh yeast (ca. 21 g)
- 450 g flour
- 1 tsp salt
- 50 g wheat bran
- 3 tbsp olive oil
- flour (for the work surface)

Dissolve the yeast in 250 ml lukewarm water. Mix the flour with the salt and bran, put it in a bowl, press a well in the middle, pour in the yeast water and oil, and knead into a smooth dough by hand or with an electric hand mixer’s dough hooks. Knead vigorously on a floured surface for about 10 minutes, then return to the bowl. If the dough is too wet, add more flour; if it’s too dry, add a little more lukewarm water. Cover and let rise in a warm place for about 1 hour.

Knead the dough again, divide into halves or thirds depending on desired length, and shape each into long rolls. Place on a baking sheet lined with parchment paper, slash lengthwise several times with a knife. Cover and let rise for another 15 minutes.

Preheat the oven to 200°C (Oven/Convection).

Brush the loaves with water and bake in the oven for about 35 minutes until golden brown. Remove from the tray and cool on a rack.
