White Beans with Sage

Ingredients

  • 200 g dried white beans
  • 4 tomatoes
  • 2 Garlic cloves
  • 2 tbsp white wine vinegar
  • 2 tbsp lemon juice
  • 2 tbsp freshly chopped sage
  • 0.5 tsp liquid honey
  • 4 tbsp olive oil
  • 0.5 tsp medium-hot mustard
  • Sea salt
  • ground pepper (from the mill)

Instructions

    Soak the beans for at least 12 hours—ideally overnight—in cold water.

    On the next day, discard the soaking water and cook the beans in boiling water for about 40 minutes. Wash the tomatoes, quarter them, remove seeds, and slice into fine strips. Peel the garlic and finely mince it.

    Whisk together vinegar, lemon juice, sage, garlic, honey, and mustard. Stir in the oil and season with salt and pepper. Add the dressing to the beans and gently fold in the tomato strips.

    Cover, chill, and let rest for at least 2 hours before serving. Taste again before serving.
