Ingredients
- 250 g White cabbage
- salt, freshly ground pepper
- 4 stalks celery
- 200 g mixed greens
- 500 g fresh pineapple
- 2 tbsp vinegar
- 3 tbsp oil
- 150 g light cream
- 2 tbsp Orange juice
- 1 tbsp Maple Syrup

Shred the white cabbage into very fine strips. Rinse, pat dry and mix with a little salt. Let it rest for 30 minutes.

Meanwhile, clean the celery, rinse and finely chop. Wash the greens, rinse, cut into bite‑sized pieces and pat dry. Cut the pineapple into chunks.

Rinse the shredded cabbage again, pat dry. In a large bowl whisk together vinegar, salt, pepper and oil. Add the prepared salad ingredients, mix well and arrange on plates.

Whisk light cream with orange juice and maple syrup. Serve extra on top of the salad.
