Ingredients
- 500 g Sauerkraut
- 3 shallots
- 2 tbsp clarified butter
- 0.125 l grape juice
- 100 g walnuts
- 200 g light grapes
- 100 ml vegetable broth (from a can)
- 1 tsp Honey
- 1 tbsp butter
- salt pepper

Peel and finely chop the shallots, then sauté them in clarified butter. Add the sauerkraut, season with salt and pepper, deglaze with grape juice, cover and simmer for 1 hour. Let cool well.

Coarsely chop the walnuts. Wash, halve, and pit the grapes. Stir the vegetable broth, honey, and walnuts into the sauerkraut mixture. Melt butter in a pot, swirl the grapes in it, and garnish the cabbage salad with this sauce.
