White Bean Salad

Ingredients
- 250 g white thick beans
- 0.5 tsp Salt
- 4 cloves garlic
- 6 sage leaves
- 4 dried tomatoes (in oil)
- 3 cloves garlic
- 1 Red Onion
- 2 Spring Onions
- 1 jar capers
- 3 tbsp best olive oil
- Salt
- Pepper
- basil (or flat parsley)
Instructions

Soak the beans overnight. Cover with water, salt, peeled garlic cloves and sage leaves and cook. For the salad finely dice the tomatoes. Peel and finely dice the garlic cloves and onions; slice spring onions into very thin rings. Drain the capers. Mix the cooked, tender beans immediately with the prepared ingredients and olive oil. Season with salt and pepper (no vinegar!).

Finally wash, dry shake, chop the herbs and sprinkle over the salad. Let the salad rest for at least 1 hour, then taste again. Before serving you may mix in olives as desired.
