Ingredients
- 250 g watercress
- 1 bulb fennel
- 250 g chickpeas (canned)
- 2 untreated oranges
- 1 tsp coarse mustard
- 2 tbsp white balsamic vinegar
- 4 tbsp Walnut oil
- Salt
- Pepper
- 2 tbsp chopped walnut kernels

Rinse the watercress, clean and shake dry. Wash the fennel, halve it, cut off the tough core and slice or shave the halves into fine strips. Rinse the chickpeas in a sieve and drain well.

Peel the oranges thoroughly, remove the segments and squeeze the juice from the remaining flesh. Mix the juice with mustard, vinegar and oil, season with salt and pepper.

Combine all prepared salad ingredients with the dressing and serve on plates. Sprinkle with walnuts before serving.
