Ingredients
- 2 bunches rocket
- 3 tomatoes
- 1 Red Onion
- 4 tbsp olive oil
- 3 tbsp balsamic vinegar
- Salt
- Pepper (freshly ground)
- 4 small goat cream cheese balls
Instructions

Wash, dry, and shake off excess water from the rocket. Wash the tomatoes and slice them. Peel the onion and dice finely.

Whisk 3 tbsp olive oil with the balsamic vinegar until creamy; season with salt and pepper.

Heat the remaining olive oil in a non‑stick pan over high heat and briefly sear both sides of the goat cheese balls so they brown slightly on the undersides without melting.

Arrange rocket and tomatoes on a plate, sprinkle with onion, top with the warm goat cheese, grind coarse pepper over it, and serve immediately.
