Ingredients

  • 1 kg white asparagus
  • 1 tsp salt
  • 1 tsp sugar
  • 1 tsp butter
  • 2 tbsp lemon juice

Instructions

    Lay the spears flat in your palm and peel around them with a vegetable peeler or parsnip knife from just below the tip to the end. If the ends are woody, cut them off with a knife. Tie each bundle of 4-5 spears with kitchen twine, securing both the top and bottom.

    Bring a large pot of water to a boil. Add salt, sugar, butter and lemon juice, then place the asparagus bundles in the water. Let them simmer gently for about 20 minutes until tender. If you plan to use the asparagus later (e.g., for a tart), remove it earlier while still very firm.

    Remove from the broth, untie the twine, and either continue with your recipe or serve immediately.

    Drizzle melted butter over the asparagus as desired.
