Ingredients

  • 8 red onions
  • 250 g mushrooms (e.g., button, shiitake)
  • 200 g halloumi
  • 60 ml olive oil
  • 2 tbsp chopped parsley
  • Salt
  • Pepper (freshly ground)
  • 2 tbsp lemon juice

Instructions

    Preheat the oven to 200°C (392°F) with upper and lower heat.

    Peel the onion skins, remove the roots but leave the stem attached. Slice the onions lengthwise in half and place on a baking sheet lined with parchment paper. Clean the mushrooms and cut off their stems. Place them on the same baking sheet. Cut the Halloumi into 1 cm cubes. Mix olive oil with parsley, salt, pepper, and lemon juice. Brush about half of this mixture over the onions. Combine the remaining oil mixture with the Halloumi cubes and spread over the mushrooms. Bake in the oven for about 15 minutes. Let cool slightly before serving.
