Ingredients

  • 140 g soft butter
  • 100 g sugar
  • 1 vanilla pod
  • 1 Egg white
  • 200 g Flour
  • 100 g peeled and ground almonds
  • 2 tbsp powdered sugar

Instructions

    Beat fat until fluffy, letting the sugar fall in. Split the vanilla pod lengthwise, scrape out half of the seeds and add them. Fold in the egg white and beat everything into a creamy mixture.

    Stir in the flour and almonds. With floured hands shape the dough into three rolls about 2 cm in diameter. Wrap in foil and chill for 1 hour.

    Preheat the oven to 180°C. Grease a baking sheet or line it with parchment paper. Cut the dough into finger-thick slices. Roll with floured hands into small sausages with pointed ends. Shape these into croissants and place on the tray. Bake for 15 minutes in the oven.

    Meanwhile, scrape the remaining vanilla seeds, mix with powdered sugar, and roll the hot croissants in it. Place them on a cooling rack to cool, then package in a box.
