Vanilla Shortbread Cookies

Ingredients

  • 2 Vanilla Beans
  • 280 g flour
  • 100 g peeled almond kernels (ground)
  • 70 g sugar
  • 210 g cold butter
  • 100 g powdered sugar
  • flour (for working)
  • baking paper (for the tray)

Instructions

    Split the vanilla beans lengthwise and scrape out the seeds. Quickly knead the flour with almonds, sugar, butter in crumbs and the vanilla seeds on a work surface into a smooth dough.

    Divide the dough into 4 portions and shape each into rolls (2-3 cm diameter) on a floured surface. Wrap in cling film and refrigerate for at least 2 hours. Preheat the oven. Line baking trays with paper. Cut the rolls into about 1 cm thick slices. Shape crescents from these and place on the tray.

    Bake in the oven at 160°C (center, fan 140°C) for about 12 minutes. Remove from the tray with the paper and dust generously with powdered sugar while still warm. Let cool.
