Ingredients
- 1 mild red onion
- 40 g pitted black olives
- 1 stalk mint
- 1 stalk Parsley
- 250 g marinated sheep cheese in oil
- 600 g watermelon flesh
- 2 tbsp lemon juice
- 2 tbsp white balsamic vinegar
- Salt
- Pepper (freshly ground)

Peel the onion, halve it and slice into thin rings. Drain the olives and cut them into slices. Rinse the herbs, shake dry and pluck the leaves. Set aside a few mint leaves for garnish; roughly chop the remaining herbs. Drain the cheese and reserve 2–4 tbsp of oil. Remove watermelon seeds and cube the flesh.

Combine onion, olives, herbs, cheese and watermelon in a bowl. Whisk together the reserved oil with lemon juice, vinegar, salt, pepper and sugar to make a tangy-sweet dressing. Toss the salad with the dressing, taste and adjust seasoning. Serve garnished with mint.
