Rabbit Skewers
Rabbit skewers with pumpkin seed pesto: These satay-style rabbit skewers are suitable as an appetizer or finger food at a buffet.
Ingredients
- 600 g rabbit back fillet
- 3 Garlic cloves
- 1 Organic Orange
- 1 tsp Paprika powder (hot)
- 6 tbsp Olive oil
- 25 g pumpkin seeds
- 6 sprigs parsley
- 1 tbsp pumpkin seed oil
- Salt
- Pepper
Instructions

Wash and pat dry the rabbit back fillets, then cut them lengthwise into thin strips.

Thread the strips decoratively onto wooden skewers and place them in a baking dish or shallow bowl.

Peel and finely chop the garlic. Wash the orange, dry it, and grate its zest finely.

Mix half of the garlic with paprika powder, 1 tsp orange zest, and 3 tbsp olive oil; brush this mixture over the rabbit skewers. Cover with plastic wrap and refrigerate for 4 hours to marinate.

Meanwhile roast the pumpkin seeds in a dry pan until they puff up; let them cool on a plate and finely chop them.

Wash the parsley, shake off excess water, pluck the leaves, and finely mince them.

Combine pumpkin seeds, parsley, remaining garlic, remaining olive oil, and pumpkin seed oil; season with salt and pepper. Let the pesto sit at room temperature to develop flavor.

Remove the rabbit skewers from the marination and let them drain; season with salt.

Heat a grill pan and grill the skewers all around for about 6-7 minutes total. Serve the skewers with the pesto.
