Ingredients
- 1 kg watermelon
- 2 handfuls clover
- 2 handfuls watercress
- 1 Lime (juice)
- 1 tbsp Apple cider vinegar
- 1 tsp Dijon mustard
- 2 tbsp light sesame oil
- 1 tbsp Olive Oil
- Salt
- black pepper (freshly ground)
- 2 tbsp sesame seeds

Cut the melon into wedges and separate the flesh from the rind. Remove the seeds with a small knife and dice the flesh into 3-4 cm cubes. Rinse the clover and watercress, then shake dry. Whisk lime juice, apple cider vinegar, mustard, both oils, and 2 tbsp water together. Season with salt and pepper.

Combine the melon, herbs, dressing, and sesame seeds in a large bowl and taste. Serve as a summer snack in small bowls if desired.
