Melon Salad with Herbs and Mozzarella

Ingredients
- 300 g honeydew melon
- 150 g watermelon
- 200 g cucumber
- 50 g black olives (pitted)
- 2 tbsp pine nuts
- 150 g watercress
- 30 g lemon balm
- 100 g mozzarella (or feta)
- 4 Tbsp lime juice
- 2 tbsp white wine vinegar
- 0.5 tsp liquid honey
- 5 tbsp grape seed oil
- Fleur de sel

Cut the honeydew and watermelon into halves, remove seeds, and use a melon baller to scoop out the flesh. Peel the cucumber, cut it lengthwise, scoop out the seeds with a spoon, and roughly dice the flesh. Halve or quarter the olives.

Toast the pine nuts in a dry skillet until golden brown. Wash and shake off excess water from the watercress and lemon balm; pluck the leaves from the stems. Drain the mozzarella and crumble it into small pieces by hand. Arrange the herbs with the melon balls, cucumber, and olives on plates, then sprinkle with pine nuts and mozzarella.

Whisk together lime juice, white wine vinegar, liquid honey, and grape seed oil; pour over the salad. Sprinkle with Fleur de sel before serving.
