Ingredients

  • 600 g watermelon (1 piece)
  • 1 bunch Basil
  • 150 g mini mozzarella balls (9% fat)
  • 600 g shrimp (peeled; deveined)
  • Salt
  • Pepper
  • 2 tbsp Rapeseed oil
  • 2 tbsp lemon juice
  • 4 tbsp olive oil
  • 1 tsp Honey

Instructions

    Peel and seed the watermelon, then cut into bite‑size cubes. Wash basil, shake dry, and slice leaves into strips. Drain mozzarella well.

    Rinse shrimp under cold water and season with salt and pepper. Heat rapeseed oil in a pan. Add shrimp and cook over high heat for 2–3 minutes until golden brown all around.

    Meanwhile whisk lemon juice with olive oil to make the vinaigrette, seasoning with salt, pepper, and honey to taste.

    Arrange watermelon, mozzarella, basil, and shrimp into four bowls and drizzle with the vinaigrette.
