Glass noodle salad with crab tails
Discover a delicious glass noodle salad featuring crab tails from Spoonsparrow. This Asian dish is a light lunch.
Ingredients
- 250 g glass noodles
- 0.5 Galia melon
- 250 g watermelon
- 1 cucumber
- 300 g crab tail (in lake)
- 2 Spring Onions
- 1 handful mint
- 3 organic limes
- 10 g ginger (1 piece)
- 10 g chives (0.5 bunch)
- 2 tbsp Light soy sauce
- 3 tbsp Sesame oil
- 0.5 tsp honey
- Salt
- chili flakes
- black pepper
Instructions

Cook glass noodles according to package instructions, rinse and drain well.

Peel and core the melons, wash the cucumber. Using a melon baller, scoop small balls from the melon and cucumber flesh. Wash crab tails and drain thoroughly. Trim spring onions, wash and slice into fine rings. Wash mint, shake dry, pluck leaves and roughly chop.

For the dressing, squeeze one lime. Peel and grate ginger. Wash chives, shake dry and cut into ribbons. Whisk lime juice with soy sauce, oil, honey, ginger, chives, salt, chili and pepper. Combine all prepared ingredients and let sit for about 15 minutes.

Meanwhile rinse remaining limes hot and halve them. Before serving season the salad, place it in a large deep bowl and garnish with halved limes.
