Ingredients

  • 12 slices baguette
  • 3 cloves garlic
  • 4 tbsp plant oil
  • 1 head romaine lettuce (≈500 g)
  • 4 tbsp Lemon juice
  • Salt
  • Pepper (freshly ground)
  • 1 tsp Mustard
  • a pinch sugar
  • 1 tbsp ground almond kernels
  • 8 tbsp olive oil
  • 4 tbsp heavy cream (at least 30% fat)
  • 50 g parmesan cheese (whole wheel)

Instructions

    Toast the bread slices in a large pan with plant oil until golden brown on both sides, adding garlic during the last minute of cooking.

    Wash and dry the romaine lettuce, then cut into strips if desired. Whisk together lemon juice, salt, pepper, mustard, sugar, almonds, olive oil, and heavy cream to make the dressing.

    Serve the salad in bowls, drizzle with dressing, grate parmesan over it, and garnish with toasted bread slices.
