Watermelon Gelée

Ingredients
- 500 g watermelon
- 80 g sugar
- 3 lemon juice
- 6 sheets white gelatin
- 1 sheet red gelatin
- Sherry or apple juice
- 8 mint leaves
- 1 sprig mint (for garnish)
- 1 cup plain yogurt
- milk
- 1 tbsp elderflower syrup (or 1-2 tsp elderflower powder dissolved in water with a little sugar)
Instructions

Marinate the fruit flesh with sugar and lemon juice for about 1 hour. Soak the gelatin in cold water.

Pass the fruit flesh through a sieve and top up to ½ l with sherry or apple juice. Rinse a ring mold with cold water and line it with mint leaves. Warm a little of the liquid, squeeze out excess water from the gelatin and dissolve it while stirring. Add the remaining fruit flesh. Stir until the mixture starts to set.

Pour the mixture into the ring mold and let it firm up.

Meanwhile, whisk the yogurt with milk and fold in the elderflower syrup or dissolved powder.

Before serving, place the mold in a warm water bath and then pour out the gelée. Arrange the yogurt around the gelée and garnish with fresh mint.
