Warm Peach with Honey and Ricotta

Ingredients
- 200 g almond flakes
- 7 tbsp honey
- 4 peaches
- 0.5 Organic lemon
- 250 g ricotta

Roast almond flakes in a dry pan until golden, then transfer to a small bowl. Add 4 tablespoons of honey and mix well.

Wash the peaches, halve them, pit them, and place cut sides down on the grill. Rinse the lemon hot, pat dry, grate its zest, and squeeze out the juice.

Whisk ricotta with 1 tablespoon honey, lemon juice, and zest until smooth; divide half into four small bowls. Brush peach halves with remaining honey (glaze) and place them cut side up in the dessert bowls. Fill each with a bit of ricotta cream, top with another peach half, and fill again with more cream. Garnish with honey‑almond mixture and serve warm.
