Quark Mousse in a Glass

Discover the airy quark mousse in a glass with elderflower from Spoonsparrow. A delightful dessert for early summer.

Ingredients

  • 7 sheets gelatin
  • 1 lemon
  • 250 ml elderflower cordial (see Spoonsparrow tip)
  • 1 handful elderflowers
  • 250 g low-fat quark
  • 150 g Yogurt (1.5% fat)
  • 120 g elderflower syrup
  • 200 ml whipping cream
  • 6 ladyfingers
  • 30 g butter (2 tbsp)

Instructions

    Soak 3 sheets gelatin in cold water for the jelly. Squeeze lemon juice and heat with cordial. Stir out the soaked gelatin into the mixture. Add the elderflowers, rinse, strip, and pour into them. Fill four glasses (about 200 ml each) and chill in the refrigerator for at least 2 hours.

    Meanwhile soak the remaining gelatin in cold water. Whisk quark with yogurt and syrup until smooth. Squeeze out the gelatin and warm it gently in a small pot. Once fully dissolved, stir in 2–3 tablespoons of the cream and then fold into the rest of the mixture. Beat the cream stiff and fold it in. Pour over the firm jelly in the glasses and refrigerate again for about 2 hours.

    For the topping, crush ladyfingers in a food processor and roast them with butter in a hot pan until golden brown. Let cool and spread over the quark mousse before serving.
