Ingredients

  • 300 g rigatoni
  • 2 chicken breast fillets
  • 2 EL clarified butter
  • 1 Zucchini
  • 100 g goat cheese (roll)
  • 6 EL sunflower oil
  • 2 EL balsamic vinegar
  • 2 EL chopped parsley
  • Salt
  • Pepper (freshly ground)
  • 4 EL roasted sunflower seeds

Instructions

    Season the chicken breast fillets with salt and pepper. In hot clarified butter, cook each side for about 5 minutes until golden, then keep warm.

    Wash the zucchini, slice lengthwise into rounds and cut across into strips.

    Meanwhile, cook the pasta according to package instructions until al dente.

    Whisk together vinegar, salt, pepper, and oil; toss with the cooked pasta and zucchini. Slice the chicken into strips and add. Sprinkle crumbled goat cheese on top and scatter sunflower seeds.
