Ingredients

  • 2 romaine lettuce heads
  • 100 g radishes
  • 2 baby fennel bulbs
  • 2 Spring Onions
  • 150 g North Sea shrimp (peeled)
  • 4 tbsp white wine vinegar
  • 4 Tbsp sunflower oil
  • Salt
  • Pepper (freshly ground)
  • 1 pinch sugar

Instructions

    Clean the lettuce leaves, separate into individual leaves, wash and dry. Wash, trim and slice radishes thin or shave them. Rinse fennel, cut stem ends into fine rings and the rest into thin strips. Trim spring onions and slice into fine rings. Finely chop fennel fronds.

    Arrange the salad leaves with radishes, fennel, spring onions, and shrimp decoratively on plates.

    Whisk vinegar, oil, fennel fronds, salt, pepper, and sugar for the dressing; taste and adjust. Drizzle over the salad and serve.
