Ingredients

  • 200 g peeled shrimp (frozen)
  • 1 stalk chicory
  • 1 Shallot
  • 0.5 box watercress
  • 4 ripe avocados
  • 1 lemon (juice)
  • 4 tbsp olive oil
  • Salt
  • ground pepper

Instructions

    Let the shrimp thaw.

    Clean the chicory, cut it lengthwise in half, remove the stem and slice the halves into strips.

    Dice the shallot finely, trim the watercress.

  4. 4.

    Cut the avocados lengthwise, remove the pits and scoop out the flesh leaving a small rim, then dice the flesh.

    Drizzle the avocado halves with lemon juice, mix the remaining juice into the diced flesh.

    Combine avocado cubes with shrimp, chicory, shallot, watercress and olive oil, season with salt and pepper, and fill the avocado halves with this mixture.
