Warm Noodle Chicken Salad

Ingredients
- 600 g cooked chicken breast fillet (2 chicken breast fillets)
- 1 broccoli head
- 2 carrots
- 250 g spiral pasta (fusilli)
- 1 onion
- 60 g grated Parmesan
- 100 g Sour cream
- 2 tbsp mustard
- 2 tbsp vinegar
- 150 ml Vegetable broth
- Salt
- Pepper

Peel and finely dice the onion. Wash the broccoli, cut into florets, and steam with the onion in vegetable broth for 15 minutes to make a light sauce. Peel the carrots, cut into sticks, add after half the cooking time, and continue steaming. Cook the pasta in plenty of salted water until al dente, then drain and rinse under cold water.

Drain the vegetables through a sieve, reserve the liquid, and mix the veggies with the pasta. Dice the chicken into cubes and add to the mixture. Whisk the reserved liquid with mustard, vinegar, sour cream, salt, and pepper to create a dressing, season to taste, then pour over the noodles. Serve the salad warm or cold, sprinkled with parmesan.
