Ingredients

  • 250 g Conchiglioni
  • Salz
  • 500 g Green Asparagus
  • 1 large red onion
  • 250 g Cherry Tomatoes
  • 150 g Parma ham
  • 4 tbsp basil pesto
  • 100 g Sour cream
  • 50 g whipping cream
  • Salz
  • Pfeffer
  • white balsamic vinegar (for refinement)

Instructions

    Cook the pasta according to package instructions in plenty of salted water until al dente. Wash the asparagus, trim the woody ends, cut off the heads and set aside, then halve the remaining lengthwise and cut into 2–3 cm pieces. Boil in salted water until al dente, about 5 minutes. Peel the onion, halve it and slice into thin strips; briefly blanch if desired and drain. Wash the tomatoes, pat dry and slice. Drain the pasta, rinse with cold water, drain again and let cool. Tear the Parma ham into small pieces and mix the pasta with asparagus, onions, tomatoes and ham.

    For the dressing whisk all ingredients together in a bowl, season with vinegar and pepper.

    Just before serving fold the dressing into the salad and adjust seasoning.
