Ingredients

  • 100 g Spelt Whole Grain Flour
  • 140 g butter
  • 60 g spelt flour (Type 1050)
  • 3 tbsp honey
  • 1 vanilla pod
  • 1 Egg white
  • 150 g walnuts
  • 100 g coconut palm sugar
  • 50 g whipping cream

Instructions

    For the dough, mix both flours with 70 g butter, honey, the inner part of the vanilla pod and the egg white until a smooth dough forms. Shape into a ball, wrap in foil and refrigerate for 30 minutes.

    Roll out the dough onto a baking sheet lined with parchment paper.

    Coarsely chop walnuts. In a small pan, heat coconut palm sugar with 2 tbsp water until it caramelises; add walnuts and remaining butter, stir in cream, and allow to caramelise until golden brown. Spread the walnut mixture over the rolled dough and bake in a preheated oven at 180 °C (fan: 160 °C) on the lowest rack for about 15 minutes. Remove, cool, and cut into triangles.
