Amaretti is a recipe with fresh ingredients from the cookies category.
Ingredients
- 3 egg whites
- 300 g almonds
- 3 drops bitter almond aroma
- 300 g sugar
Instructions

Beat the egg whites until stiff. Fold in the almonds, almond oil and sugar into the meringue.

Shape walnut‑sized balls from the dough, press slightly flat, and place on a baking sheet lined with parchment paper. Leave some space between them as the Amaretti will spread while baking.

Bake in a preheated oven at 160 °C (middle rack) for about 25 minutes. Remove, set on a wire rack, and cool.

Serve with espresso.
