Walnut Banana Cake

Ingredients
- 250 g bananas (2–3 pieces each)
- 300 g softened butter
- 200 g sugar
- 1 pinch salt
- 4 eggs
- 400 g spelt flour
- 50 g cornstarch
- 1 packet baking powder
- 100 g ground walnuts
- 50 g chopped walnuts
- 50 ml milk (add more if needed)
- 2 tbsp powdered sugar (for dusting)

Line a springform pan with parchment paper. Puree the banana flesh in a blender until smooth. Beat the butter with an electric mixer until creamy, then gradually add sugar and salt, mixing until fully dissolved. Add the eggs one at a time, beating for about 5 minutes to make the mixture frothy.

Fold in the banana puree. In a separate bowl combine spelt flour, cornstarch, baking powder, ground walnuts and chopped walnuts. Alternately stir the dry mix with milk into the egg batter until a smooth dough forms that falls off the spoon without tearing. Add more milk if necessary.

Pour the batter into the prepared pan and bake in a preheated oven at 180 °C (160 °C fan; gas: level 2–3) for 45–50 minutes. Test with a skewer. When done, remove the cake from the oven, transfer to a wire rack to cool completely. Cut into pieces and dust with powdered sugar before serving.
