Banana Chocolate Cake
The Banana Chocolate Cake from Spoonsparrow is always a hit!
Ingredients
- 50 g coconut oil
- 350 g ripe bananas (peeled)
- 100 ml Almond drink (almond milk)
- 2 Eggs
- 150 g spelt flour (Type 1050)
- 50 g ground almonds
- 50 g coconut blossom sugar
- 40 g cocoa powder
- 2 tsp Baking powder
- 0.5 tsp vanilla powder
- 1 pinch salt
- 50 g dark chocolate (70% cocoa content)
- 30 g Walnuts
- 1 tsp lemon juice
Instructions

Melt the coconut oil in a small pot. Add 300 g bananas and almond drink, then blend finely with an immersion blender or food processor.

Add eggs, spelt flour, ground almonds, coconut blossom sugar, 30 g cocoa powder, baking powder, vanilla powder, and salt to the banana puree; mix well with a hand mixer. Roughly chop chocolate and walnuts, then fold into the batter.

Line a cake tin with parchment paper. Pour the batter into the tin and bake in a preheated oven at 180 °C (160 °C fan) for 30–35 minutes, checking with a skewer. Remove and let cool completely. Slice remaining banana, drizzle with lemon juice, dust the cake with extra cocoa powder, and top with banana slices. Cut into pieces and enjoy.
