Christmas Cookies with Quince Jam

Ingredients
- 250 g flour
- 100 g sugar
- 1 pinch salt
- 100 g ground almond kernels
- 1 tsp organic lemon zest
- 1 egg
- 200 g butter
- 150 g powdered sugar
- 1 tbsp Lemon Juice
- crystal sugar
- 150 g quince jam

Mix the flour with sugar, salt, almonds and lemon zest; sift onto a work surface, create a well in the center, crack the egg into it and distribute butter pieces around the well. With a large knife chop all ingredients into crumbs and quickly knead by hand into a smooth dough. Shape into a ball, wrap in cling film and refrigerate for 30 minutes.

Preheat the oven to 180°C (356°F) with top and bottom heat. Roll out the dough on a floured surface to about 0.4 cm thickness and cut star shapes with an appropriate cutter (~6 cm diameter). From half of the cookies, cut a small star in the center. Place the cookies on parchment paper-lined baking sheet and bake for about 12 minutes. Remove and cool.

Whisk powdered sugar with lemon juice into a thick glaze and brush one side of each cookie with it. Use a small piping bag to trace outlines. Sprinkle with crystal sugar and let dry.

Warm the jam and spread it over the cookies without stars. Cover with matching pieces, press lightly and allow to dry.
