Ingredients

  • 700 g mixed fresh forest mushrooms
  • 2 stalks leeks
  • 1 onion
  • 1 tbsp butter
  • 1 l meat broth (from the can)
  • salt and pepper to taste
  • 2 tbsp Sour cream
  • 2 tbsp chopped parsley

    Clean the mushrooms, slice the larger ones into rounds and halve the smaller ones. Wash the leek stems, trim off the green parts, cut the white part into rings. Peel and finely chop the onion. Heat the butter in a pot and sauté the onion and leeks until translucent; add the mushrooms, cook briefly, then pour in the broth.

    Simmer everything over low heat for 30 minutes, season with salt and pepper, then blend roughly in a blender. Return to the pot, stir in the sour cream, bring to a boil once more. Serve on plates and sprinkle with parsley.
