Ingredients

  • 3 cm fresh ginger
  • 1 clove garlic
  • 1 stalk lemongrass
  • 3 spring onions
  • 1 red chili pepper
  • 400 g mixed mushrooms (e.g., shiitake, enoki, oyster, king oyster)
  • soy oil
  • 800 ml poultry broth
  • 1 lime juice
  • 2 tbsp Light soy sauce
  • 1 tbsp oyster sauce
  • black pepper (ground)
  • 2 tbsp toasted sesame seeds
  • fresh coriander for garnish

    Peel the ginger and garlic and slice them thinly. Wash, trim, and finely chop the lemongrass. Clean the spring onions and cut into narrow strips. Wash the chili, halve it lengthwise, remove seeds, and finely chop. Clean the mushrooms, wipe with a kitchen towel, and cut if necessary.

    Heat 2 tbsp oil in a pot and sauté garlic, lemongrass, spring onions, and ginger. Add the mushrooms, sauté briefly, then pour in the broth. Simmer over medium heat for about 5 minutes. Season with lime juice, soy sauce, oyster sauce, and pepper; sprinkle toasted sesame seeds on top and serve garnished with coriander.
