Mushroom Soup with Nuts

The mushroom soup with nuts from Spoonsparrow is healthy and always delicious.

Ingredients

  • 350 g Mushrooms
  • 1 onion
  • 5 g Butter (1 tsp)
  • 2 star anise
  • Salt
  • Pepper
  • 400 ml Vegetable broth
  • 30 g walnut kernels
  • 40 g arugula (0.5 bunch)
  • 100 ml heavy cream
  • 100 ml milk (3.5% fat)

Instructions

    Clean and chop the mushrooms. Peel and dice the onion. Heat butter in a pot and toast the star anise with stirring over medium heat for about 1 minute. Add onions and mushrooms, cooking until golden brown over medium heat. Season with salt and pepper.

    Add vegetable broth and simmer covered for about 10 minutes. Meanwhile, roughly chop walnuts. Wash arugula, dry, and also roughly chop it.

    Remove star anise from the soup and puree the soup finely in a blender. Add cream and milk, bring to a boil again. Season with salt and pepper. Divide the soup into four cups and garnish with walnuts and arugula.
