Ingredients
- 1 egg yolk
- 3 tbsp Lemon juice
- 125 ml sunflower oil
- 4 tbsp heavy cream
- Salt
- Pepper (freshly ground)
- 3 stalks celery
- 50 g walnut kernels
- 3 Boskop apples

Whisk the egg yolk with 1 tbsp lemon juice in a mixing bowl, then add the oil first dropwise and gradually in a thin stream while whisking until a creamy mayonnaise forms. Stir in the cream and season with salt and pepper.

Wash and trim the celery, set aside some green for garnish. Slice the celery at an angle into thin strips. Roughly chop the walnut kernels.

Wash the apples, quarter them, remove the core, and cut into 2–3 cm pieces. Immediately drizzle with the remaining lemon juice.

Combine the salad ingredients with the mayonnaise and season again to taste. Serve garnished with celery greens.
