Waldorf Salad with Mango Chutney

Ingredients
- 4 stalks celery
- 2 apples (e.g., Cox Orange)
- 80 g Cashews
- 100 g yogurt
- 50 g mayonnaise
- 50 ml carrot juice
- 50 g mango chutney
- 1 splash Lemon juice
- Salt
- Cayenne pepper
- 1 Spring onion

Rinse the celery, roughly chop the leaves and slice the stalks into rounds. Wash the apples, quarter them, remove the cores and cut the quarters into thin strips. Roughly chop the cashews.

For the dressing whisk together yogurt, mayonnaise, carrot juice and chutney, then season with lemon juice, salt and cayenne pepper. Fold in the prepared salad ingredients and taste. Transfer to a bowl.

Wash, trim and slice the spring onions into fine ribbons. Sprinkle over the salad and serve.
