Ingredients
- 2 red bell peppers
- 2 yellow bell peppers
- 500 g red cabbage
- 1 Carrot
- 400 g jicama
- 3 tbsp olive oil
- 2 tbsp white wine vinegar
- 1 tsp Honey
- 2 tbsp Lime juice
- Salt
- Cayenne pepper
- 2 tbsp coriander

Wash the bell peppers, halve them, remove seeds and white membranes, and slice into very thin strips. Clean the red cabbage, remove the core, and shred it. Peel the carrot and jicama, and shred them into fine sticks as well. Whisk together olive oil, vinegar, honey, and lime juice; season with salt and cayenne pepper.

Fold in the coriander and all the vegetables thoroughly and let marinate for at least 1 hour. Taste again before serving. Pairs very well with grilled dishes.
