Vegetable Salad with Exotic Fruits

Ingredients
- 1 head lettuce
- 1 Carrot
- 1 bell pepper
- 2 stalks celery
- 0.5 bunch spring onions
- 1 Tbsp coriander leaves
- 1 Mango
- 1 tsp lime zest
- 6 tbsp lime juice
- 2 tsp cane sugar
- 1 tbsp germ oil
- 1 tbsp thick unsweetened coconut milk (canned)
- 1 tbsp soy sauce
- 1 tsp ginger
- 0.25 tsp chili powder
Instructions

Separate the salad into leaves, wash, clean, rinse, dry by spinning and cut into small pieces.

Peel the carrot and slice into fine sticks. Wash the bell pepper, clean, halve, deseed, remove all white membranes, and cut into thin strips. Wash the celery, clean, and slice into thin rounds. Wash the spring onions, clean, and slice into fine rings.

Peel the mango, halve, remove the pit, and slice into thin wedges.

Combine lime juice with a pinch of salt, sugar, oil, soy sauce, coconut milk, and ginger. Season with salt and chili powder. Toss the salad and vegetables with the dressing, then arrange on plates with mango slices and spring onions.
