Waldorf Salad

A fresh vegetable salad recipe featuring crisp apples, crunchy walnuts, and creamy mayonnaise. Try this and other recipes from Spoonsparrow!

Ingredients

  • 1 egg yolk
  • 3 tbsp Lemon juice
  • 125 ml sunflower oil
  • 4 tbsp heavy cream (at least 30% fat)
  • Salt
  • ground pepper
  • 3 stalks celery
  • 50 g walnut kernels
  • 3 Boskop apples

Instructions

    Whisk the egg yolk with 1 tbsp lemon juice in a bowl; slowly drizzle in the oil while whisking until a creamy mayonnaise forms. Fold in the cream and season with salt and pepper. Wash and trim the celery, reserving some green for garnish. Slice the celery diagonally into thin strips. Roughly chop the walnuts.

    Wash the apples, quarter them, remove cores, and cut into 2–3 cm pieces; drizzle immediately with remaining lemon juice. Combine the salad ingredients with the mayonnaise, taste again, and adjust seasoning. Serve garnished with celery greens.
