Ingredients

  • 400 g champignons
  • 1 bunch spring onions
  • 1 Garlic clove
  • 1 small zucchini
  • 3 tbsp olive oil
  • 1 tsp dried herbs
  • Salt
  • ground pepper
  • 1 tbsp balsamic vinegar
  • 1 tsp Honey
  • lettuce leaves (for serving)

Instructions

    Clean and slice the mushrooms. Trim and rinse the spring onions, cut 2/3 into fine rings, set aside the rest.

    Peel the garlic. Wash, trim, and dice the zucchini.

    Heat 1 tbsp olive oil in a pan. Sauté the mushrooms, spring onions, and zucchini for 4-5 minutes. Add the garlic, then season with dried herbs, salt, and pepper.

    Whisk the remaining olive oil with vinegar, honey, salt, and pepper to make a vinaigrette. Pour over the mushroom‑zucchini mixture.

    Arrange the sautéed mushrooms on lettuce leaves and garnish with the reserved spring onion rings.
