Waldmeister Bowle with Lime and Cucumber Slices

Ingredients

  • 4 stalks of Waldmeister (harvested before blooming)
  • 1 bottle white wine (e.g., dry Riesling)
  • 1 untreated lime
  • 250 ml sparkling wine (more if desired)
  • 0.25 Cucumber
  • Waldmeister or mint for garnish

Instructions

    Rinse the Waldmeister and let it drain well. Tie the stalks into a small bunch, hang upside down, and allow them to air dry for about 1-2 hours.

    Hang the dried Waldmeister in a carafe and secure it with a string. Pour the wine over it. Wash the lime, slice it, and add to the carafe. Let steep for about 20 minutes; the bitter ends of the stalks should ideally stick out of the wine.

    Remove the Waldmeister and chill the bowle for at least 30 minutes.

    Wash the cucumber and cut into thin slices.

    Before serving, top the chilled bowle with sparkling wine, add cucumber slices, and garnish with fresh Waldmeister leaves or mint.
